CUP O' COBBLER RECIPE

With the Summer months coming and the fresh fruit soon to be abounding, I thought I'd pull this recipe from the archives and share it with you once again. This is so fun to make with kids on a Summer evening after a day spent berry picking. Enjoy, and be sure to let me know if you give it a try!

I've said it here before, but I love to cook - and it isn't just because I love to eat. I do, but there is something poetic about food that has always appealed to me. The significance of meals withstands any season of life. A certain recipe can bring you back to your childhood even if it's been twenty years since you last tasted it. An out of sorts day can turn memorable as soon as you gather around the table together and share in a meal, even if it's a simple one. You can create ties to your community and let your roots sink deep into your neighborhood just by inviting people over for dinner. It can be the most important gift you can give when someone is having a hard time financially, is under the weather, or is in the trenches of learning to care for a new life. Sharing in meals together is something that I feel has lost it's importance in society over the years, but it's something I hope to deeply ingrain in my children. There's something vulnerable about opening your home to someone, allowing them to see your flaws more closely, allowing them to put things into perspective and see that you're just human like them. We all have dirty kitchens. We all have loud kids. And here in this city, we all have small spaces.

I can remember making our way through Alex's family's property as kids, picking blackberries for this recipe. The hard thing about picking fruit for me is that it just tastes better fresh. I'd rather eat it straight from the vine than cook it into a cobbler, but when you have an excess of fruit like we did, a cobbler recipe comes in handy. We spent Friday afternoon picking mulberries in a park that Alex is working in for the Summer and ended up with almost a gallon of berries. There are plenty of fancy cobbler recipes out there, but this one is easy to remember and you almost always have all the ingredients on hand. It's so easy that it would be a perfect project for kids this Summer or to help your toddler with. It's also really versatile - you can use any kind of fruit, add more or less fruit, lemon, or even cubes of cream cheese, make a crumble topping for it, bake it in muffin form - the possibilities are endless! Enjoy!

A few notes: 
• The recipe calls for two cups of fruit - we ended up dumping extra on top, so use as much as you have. It would even still be good with just one.
• It also calls for a cup of sugar. We cut it in half and it was still plenty sweet, but it also depends on how sweet your fruit is. Things like apples and pears probably need a whole cup. Strawberries turn tart when cooked, so the whole cup would probably be needed with them as well.
• I always add half white flour and half whole wheat when baking.
• If you use self rising flour, there's no need for the baking powder.

CUP O' COBBLER RECIPE
a super simple cobbler - perfect for summertime
Ingredients
  • 2 C. fruit of your choice
  • 1/2 - 1 C. sugar
  • 1 C. flour
  • 1 C. whole milk
  • 1 stick of butter (1/2 C.)
  • 2 teas. baking powder
Instructions
- Mix flour, sugar, and milk together. Melt the butter in the baking dish. Pour flour mixture in, pour fruit in, and swirl but don't stir. Bake until golden brown for 45 minutes to an hour at 375 degrees. See, easy peasy!
